Day 3 of Living Healthy- Homemade salsa, hummus and protein balls

Ok guys I took the plunge into eating a whole month without dairy, gluten, corn, soy, sugar, peanuts, oranges, white potatoes, white rice, caffeine and alcohol. You know all the good things in life. 😭 If any of you missed my last post I am doing Arbonne’s 30 days to healthy living. So here is what a normal day looks like for me.

6:30- Detox Tea

7:00- I mix together my digestion plus, 1 tsp of apple cider vinegar and 1/4 of a fizz stick in about 1/2 cup of water. Plug your nose and just take it like a shot

7:15- Protein shake

8:30- Fizz stick

10:00- Snack like veggies and hummus, berries, green apple or brown rice cake

12:30-1ish- Protein shake

2:00- Fizz stick

3:00- Bean chips and salsa, avocado or protein ball

5:30- Brown rice burrito bowl (brown rice, black beans, ground beef or chicken, red onion, roasted red bell pepper, avocado, salsa)

6:00- Dessert (fruit or protein ball)

8:00- Detox Tea

The first few days are hard. You are going to have headaches and be lethargic. The fizz sticks definitely help with your energy level. If I can get a little personal too you will have a ton of gas and it will STINK!!! Seriously like rotten eggs. Stay away from your husband if you still want him to be attracted to you because this is a total turn off haha. Just realize though that all that crap was inside you and your finally getting it out.

I’m not going to lie I have been hungry and sad when people bring delicious food around me. I need to feel better though and I want to lose weight so bad. Just know that you can do anything for 30 days.

Here is some recipes from the week.

Hummus:

1 15 ounce can garbanzo beans

– 1/4 cup lemon juice

– 1/4 cup Tahini

– 1 Garlic Clove

– 2 Tbsp Extra virgin olive oil

– 1 tsp salt

– 1/2 tsp cumin

– 2-3 Tbsp water

– Paprika sprinkled on top

Put everything in a food processor but the olive oil. Mix up. Then slowly add in the olive oil while it is mixing.

Salsa:

– 1 28 ounce can fire roasted tomatoes

– 1 jalapeno with seeds

– 1/2 white onion

– handful of cilantro

– Juice from one lime

– 1 tsp cumin

– 1 tsp salt

– 1 tsp pepper

Put everything in a food processor and blend to the consistency you want. Add more salt and pepper to taste.

Protein Balls:

– 2 cups oats

– 3/4 cups agave

– 2 scoops vanilla protein powder

– 1 scoop chocolate protein powder

– 1 cup almond butter

A splash almond milk to help them stay together.

Mix it all together in a food processor and make balls. I like to keep mine in the freezer but they are fine in the fridge too.

Staying strong only 27 more days to go.

30 Days To Healthy Living

I have struggled for a few years losing fifteen pounds that have been hanging on to me since I have gotten married and had children. It definitely doesn’t help that I make all this delicious food from the pioneer woman. So I have decided to take a break for 30 and do the ArbonneArbonne 30 days to healthy living.

Arbonne is a company that focuses on pure and botanically based ingredients. They do nutrition, skincare, hair products, makeup…. I mean I could go on and on but I’ll let you all look for yourself.

When it comes to stuff that I put on my skin I would much rather put natural ingredients. I mean have you ever looked up what’s in your makeup. It might freak you out! This is the skincare line that I use and it is an amazing anti aging product. I have only been using it for two days but I’ll be sure to take before and after pictures for you guys.

Now onto the nutrition. They offer 30 days to healthy living and they offer so much for this. There is a whole list of food that you can not have for 30 days like dairy, gluten, caffeine 😬😱. Slightly afraid of taking my wonderful coffee out of my life. This comes with two bags of protein, two boxes of fizz sticks, digestion plus, two boxes of detox tea, fiber booster and you can either have the 7 day cleanse or greens. You have two protein shakes a day and then one meal for dinner with a few snacks a long the way. Now don’t freak out about figuring out meals because they give you recipes and shopping lists. As for as the caffeine you get to have something called fizz sticks that have your caffeine in it. The point is to take 30 days to detox your body, feel better and best of all lose weight. I will be posting my before and after pictures and telling you all about how I feel along the way. Just look at how awesome my friend looks since she started Arbonne.

Whole Roasted Chicken

Is there anything better than roasted chicken? I don’t think so. I hope I’m not the only one that would love to just rip off the skin and just eat that, it is so so good. One of the other reasons I love roasted chicken is because I can make an amazing chicken noodle soup from soaking the carcass. Don’t worry I will do a post about that too because everyone needs that with this cold water coming.

Unrelated subject everyone thinks that Arizona in the United States is only super hot desert. Nope! This is the beautiful place that I live in fall.

And winter

We have every beautiful season here!

On to the main subject:

Whole Roasted Chicken

Cook at 450 for 15 minutes and 350 for about 1 hour to an hour and fifteen minutes until internal temperature reaches 165.

1 Whole Roasted Chicken

2 onions cut into quarters

1/2 stick of butter

1 Tbsp paprika

1 tsp salt

1 tsp pepper

1 tsp garlic salt

1 tsp Dash

Lemon juice from 1/2 a lemon and a couple tbsp of honey mixed together

I use a stone baking dish for this similar to this oneBaking Dish– click this link to get one!

Preheat your oven to 350.

Mix your softened butter with all of the spices.

Clean your chicken very well and pat dry.

Put your butter and spice mixture all over the chicken and put on top of a bed of onions in the baking dish.

Cook uncovered at 450 for 15 minutes. This helps crisp up the skin.

Then put the cover on cook at 350 and baste the chicken with the honey and lemon juice mixture every 15 minutes but do it really lightly so you don’t brush all the spices off.

Repeat this process until internal temperature reaches 165.

What a pretty bird!! Haha

I also made some gravy from the drippings, completely optional though.

Take all the chicken off the bone and put it in a crock pot with water covering the whole thing over night. You can make soup the next day or keep it in the freezer for whenever you need chicken broth.

This bone broth is actually extremely healthy for you as well. All the collagen is good for bone and joint health.

Quinoa Turkey Chili

As it is starting to cool off outside and the leaves are beginning to change I am getting more into the fall spirit. So we put up the fall decorations up, popped in a vanilla nutmeg scentsy and made some chili. Fall makes me so happy I love everything about it!

So this chili recipe is mine not the pioneer woman’s but it is so delicious and healthy that I thought I would share it.

Quinoa Turkey Chili

1 Tbs olive oil

3 cloves garlic minced

1 onion diced

1 pound ground turkey

1-1/2 cups quinoa depending on how much quinoa you like

2 14.5 ounce cans diced tomatoes

1 14.5 ounce can crushed tomatoes

3 Tbs tomato paste

1 1/2 Tbs chili powder or more to taste

2 tsp cumin

1 1/2 tsp paprika

1/2 tsp cayenne

1/2 tsp ground coriander

1-2 tsp sugar (totally optional but it helps to counteract all the acidity of the tomatoes)

Salt and pepper to taste

1 15 ounce can kidney beans

1 15 ounce can black beans

Start with a large pot on the stove top with olive oil, garlic, and onions. When they are translucent add the turkey to brown.

This is the easy part just add all the other ingredients to the pot. It does not matter what order.

Now you can cook your quinoa ahead of time but I just like to cook it in my chili because I hate doing any extra dishes. So I add an extra 1- 1 1/2 cups of liquid (vegetable stock or water) that the quinoa will absorb. Let this simmer for 30-45 minutes until all your quinoa is cooked.

I like to serve this with sour cream, cheese and avocado if I have it.

This is so delicious with some corn bread on the side that Lexi made.

Lexi wanted her face painted at an event we were at earlier that day but we had to leave before we could. She was so sad so I painted I butterfly on her arm. Totally looks like a butterfly. Right? Haha

Homemade Granola & Protein Balls

I jump at the chance to make little bites of something to take care of my sweet tooth. Trust me its one of the biggest sweet tooths you have ever seen so I have to keep it under control. I don’t know if any of you struggle with this as much as I do. Let me know what you guys do to control yours?

Homemade granola is a delicious snack or breakfast.

I love to put it on top of apples or with yogurt and strawberries

Its hard to say the recipe for this because I don’t measure but here goes nothing.

Around 1/4 cup brown sugar

1/8 cup molasses

1/8 cup honey

1 Tbsp butter

Heat this on the stove top just long enough until it all melts together.

This next part is your choice, you can put anything you would like in your granola; oats, chia seeds, any kind of nuts, raisins or sunflower seeds. The combinations go on and on. I only did oats and chia seeds because I like a plain granola.

Start with around 3-4 cups of granola and add the brown sugar mixture. Add more oats if need be. Cook this on a sheet pan for 20 minutes at 325. Let this cool and then break it apart. Don’t keep it in the oven longer if it doesn’t feel hard yet because it will burn pretty quickly. Trust me I am a pro at burning things.

Protein Balls

Another one that is hard to give you the recipe because I just add the ingredients until its the right consistency.

2 cups peanut butter

1 cup oats

3 Tbsp chia seeds

1/2 cup mini chocolate chips

1/4 cup honey

Mix this all together and make small balls. Place on a non stick pan and freeze for a few hours. Then I put them all in a zip lock bag and keep them in the freezer.

Tip for any breast feeding momma’s I eat these to keep up my breast milk supply. I also add some brewers yeast to them which also boosts your milk supply.

Chinese Lettuce Wrap With Green Beans

Almost done with my week of being healthy so I can get back to the pioneer woman cooking. What cracks me up is I have already lost three pounds!! I think I will just work out more to try and counteract the delicious food! Still worth it though and I think my husband is enjoying some different recipes.

I made a Chinese flavored ground beef lettuce wrap. Everytime we go to a Chinese restaurant this is one of the appetizers I go for!

Chinese Lettuce Wraps w/ Green Beans

Delicious Scale- 9 out of 10

Husband Delicious Scale- 9 out of 10

Prep Time- 30 minutes

1 pound ground beef

1 Tbsp sesame oil

3 garlic cloves minced

3 slices ginger minced

1/4 cup soy sauce

1/2 cup brown sugar

1 Tbsp sriracha (more or less based on you spice level)

A few thinly cut carrots

Start by browning the meat in the sesame oil, garlic and ginger. Drain 90% of the fat off. Add the soy sauce, brown sugar and sriracha until the meat looks shiny. Transfer the meat to a bowl. I julienne cut some carrots and then added them to the same pan to soak up all the left over flavor. Give them a little bit of a char and take them out of the pan.

I used two leaves of romaine and piled on the meat and carrots on top. I served this with a side of green beans.

I have noticed when I let my daughter help she is more likely to eat it. So I have her up next to me helping put everything into the pan.

Of course you have to lick the brown sugar out of the measuring cup! We don’t waist.

I have learned to embrace the mess because of how much joy she gets from helping. I can clean anytime but you don’t get these moments back.

As for the green beans I use fresh green beans and threw them in boiling water to soften. I cut and Lexi tosses them in.

I boiled them for about 15 minutes and then threw them in the same saute pan I used for the meat and carrots. This creates even more flavor. I add a tsp of sesame oil, 1 Tbsp butter, half of a chopped white onion, 2 cloves garlic and a tsp or so of soy sauce. Saute this for about five minutes to absorb the flavor. Guys this is so so good! Amazing flavor profile you will not think your eating healthy.

Plus she ate all of it! Complete win! Have some fun with your kids!

Quick Greek Lunch

I use to work at this restaurant that served something called a Greek Pita. It was a toasted pita bread topped with hummus, salad(lettuce tomatoes cucumber relish and feta tossed in a balsamic vinaigrette). This is my version but without it all being mixed together.

I told you guys I was going healthy for the week but I just had to have some pita as well.

So I cut up some pita bread and sprinkled it with olive oil and salt. Put it under the broiler just to toast up a little bit.

As far as the salad I put romaine, cucumbers, pico de gallo, feta, red onions and avocado. Topped it with a balsamic dressing. I like to make my dressings in a mason jar, learned this from pioneer woman of course.

Balsamic Dressing

Olive oil

Balsamic

A little sugar

Salt and pepper

Garlic powder

Small squeeze of Dijon mustard

Dash of dried basil

Shaken in a mason jar is great but if you want an even better dressing blend this up and it becomes this slightly thick amazing dressing.

Now the perfect bite is some pita bread with hummus spread over the top with a little bit of the salad on top. Eat it like a pizza! So so delicious and healthy.
