I’m slowly getting into Terry Wahl’s Protocol, which is a diet for autoimmune diseases. She has Multiple Sclerosis which is a very severe disease and was in a wheelchair within two years of being diagnosed. She researched something to help slow down the progression of the disease because she knew there was no cure. 19 years later she is out of that wheelchair and bikes marathons. Her first stage is basically the paleo diet but she wants you to eat 9 cups of fruits and vegetables a day. Those can’t be the high sugar fruits either like banana, apple, pear…. until after you have had your 9 cups. This is actually a lot so I’m slowly moving my way into this diet. Mainly you can’t have sugar, gluten, dairy and processed foods. I will do anything to help slow down the progression of my autoimmune issues and I would love to help the rest of you that have auto immune issues too. Comment with the autoimmune problems that you have.
Ground Turkey Lettuce Cups
1 pound ground turkey
1 package McCormick Taco Seasoning (or make your own I’m just lazy haha)
1 Tbsp Olive Oil
1/2 Yellow Onion Diced
1 Corn on the cob (grilled and cut off the cob)
Hand Full Cherry Tomatoes
1/2 Red Onion Diced
1/2 to 1 Jalapeno add more or less based on your spice level (Diced)
4 Strands of Cilantro
Salt and Pepper
Sour Cream (Don’t add this if you are going without dairy, I’m easing my way into this so I put a little bit)
Add yellow onion and olive oil to saute pan and cook until translucent. Then add ground turkey and about 3/4 of Taco Seasoning bag. While this is cooking start dicing your tomatoes, red onion, jalapeno, cilantro and avocado like your making a pico de gallo. Mix in a bowl with the corn off the cob, lime juice, salt and pepper to taste. Spoon the ground turkey into your lettuce cups and add pico de gallo as well as sour cream on top.
