When you have a lot of strawberries and they might go bad soon this is the best way to use some of them up. They are so delicious and might I say healthy? HAHA! Not Really. But they have oatmeal and strawberries in them so we will say that they are healthy.
Stawberry Oatmeal Bars
1 Cup oats
3/4 Cups whole wheat flour or white flour whatever you would like (we are being #healthy so I used whole wheat flour haha)
1/3 Cup brown sugar
1 tsp ground ginger
1/4 tsp salt
6 Tbsp butter (melted)
2 cups small diced strawberries
1 tsp cornstarch
1 Tbsp lemon juice
1 Tbsp sugar
1/2 cup powdered sugar
1 Tbsp milk
1/2 tsp vanilla
Preheat Over to 375. Line an 8×8 baking pan with parchment paper so the side overhang. This makes it so much easier to just pull out of the pan. In a bowl mix together oats, flour, brown sugar, ginger, salt. Then pour in the melted butter and combine. Set aside 1/2 cup of the crumble mixture then press the rest into an ever layer in the bottom of the pan.
Put the diced strawberries in a bowl and put the sugar, lemon juice and cornstarch over them. Stir. Place this on top of the crumble mixture in the pan
Now put the remaining of the crumble mixture onto of the strawberries. Some of the strawberries will show through. Put in the oven for 35-45 minutes until top looks bubbly and golden brown. Let them cool for 5 minutes and then lift with the parchment paper out of the pan. Cut into squares and put glaze over the top. So Delicious!
