Stock Up Your Freezer With Some Crock Pot Meals

This post is full of 7 super easy crock pot recipes to help with your busy life! One of my new years resolutions has been to be more giving and helpful to anyone in need. One of the best ways to do that is with food. Everyone loves it but not everyone has time or likes to do it, so what better thing to give someone than a meal? If someone is having some health issues, just had a baby or going through any kind of emotional difficulties a meal from someone that cares can be just the thing to turn their day around. This is exactly why I love to always have a full freezer so if anyone needs one I don’t have to go through any trouble and my husband loves having them too for the days I work. Love that guy to death but he will not cook! Haha!

BAGGY RACK

Trust me I have made my fair share of mistakes with spilling a huge thing of soup because I didn’t have a holder.

Mexican Quinoa

1 pound ground turkey or beef

1 1/2 cups quinoa (uncooked)

1 can black beans

1 can corn

1 can diced tomatoes & green chili

1/2 cup salsa

1/2 onion (diced)

1/2 bell pepper (diced)

1 cup water

1 can (19 ounces) red enchilada sauce

1 tsp chili powder

1/2 tsp cumin

2 cups cheese

Brown the meat first and cool. Then put all the ingredients except the cheese in a gallon freezer zip lock bag. Label it and write on the bag to put 2 cups of cheese after it has finished cooking. Cook on high for four hours. This is so delicious with a little sour cream.

Beef Roast and Carrot

2 pounds beef chuck shoulder roast

1-2 pounds carrots

3 Tbs olive oil

3 Tbs red wine vinegar

1/2 packet McCormick Chipotle Seasoning

1/2 packet McCormick Mesquite Seasoning

Place in freezer gallon zip lock bag and place in your freezer. Take out the night before to defrost and then put in crock pot on low 8-10 hours. Occasionally I will add potatoes to this or you can just serve it over mashed potatoes.

Mustard Chicken

1 cup yellow mustard

1/2 cup maple syrup

2 Tbs red wine vinegar

1 tsp salt

1/2 tsp pepper

6 pounds chicken breast

Place in gallon freezer zip lock bag and place in your freezer. Take out the night before to defrost and then put in crock pot on low 8 hours.

Southwest Chicken Chili

1 1/2 pounds boneless chicken breast

3 cans petite diced tomatoes

2 cups medium salsa

1 can corn

2 cans black beans

1 package ranch seasoning

1 package taco seasoning

Place in gallon freezer zip lock bag and place in your freezer. Take out the night before to defrost and then put in crock pot on low 6-8 hours. Yes it will all fit it’s all the way to the top but it will fit. I put sour cream, cheese and cilantro on top of my chili.

Sweet & Sour Meatballs

1 16 ounce package of frozen fully cooked meatballs (or you can make your own, I will make really large batches of meatballs that I will freeze to take out for all kinds of recipes)

1 green bell pepper (diced)

1 red bell pepper (diced)

1 (16-18oz) bottle sweet and sour sauce

1 cup pineapple tidbits drained

Add the meatball, bell peppers and sauce to freezer bag and label it stating to add the pineapple during the last hour of cooking. Cook on low for 6 hours or high for four hours. Serve over rice.

Olive Garden Chicken

4 chicken breast

1/4 cup grated Parmesan cheese

16 ounces Olive Garden Italian dressing

Yes that is really all that goes in this recipe and it is amazing. My husbands favorite! Place in gallon freezer zip lock bag and place in your freezer. Take out the night before to defrost and then put in crock pot on low for 8 hours.

Salsa Chicken

4 chicken breast

1 cup salsa

1 package taco seasoning

1 can cream of mushroom

1/2 cup sour cream

Place in gallon freezer zip lock bag except the sour cream add that during the last hour or two. Take out the night before to defrost and then put in crock pot on low 8 hours. I use this recipe for taco’s, enchilada’s or my favorite chimichangas.
